Serves 10 people
For the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Syrup: Put the listed ingredients in a saucepan, heat until it reaches a simmer, mixing so the sugar melts. Next, take off the stove allowing it to cool down fully. Decant to a clean bottle, close it and refrigerate it in the refrigerator, where it will keep for about four weeks.
For the Batch Mix: Mix the specified liquids in a large bottle, allow it to infuse for an hour, then filter it best through cheesecloth, making it completely strained.
When ready to serve: Measure 85ml of the batch mix to a cocktail shaker filled with ice, gently stirring carefully for about 60 seconds to cool it down. Filter into a cold coupe glass or equivalent, garnish with a few cranberries adding the final touch by giving it a quick spritz with the mandarin essence over the drink.
